Il Giardino
Il giardino, in italian “the garden”, is the place where many of our vegetables and herbs come from. It hosts more than 150 edible and medicinal perennials, to which we add hundreds of annuals every year.
Certified by the Canadian Wildlife Federation we grow food for our business as well as
provide a safe and healthy habitat for the wildlife.
From the common apples and pears to more rare quinces and kiwis, without forgetting the
berries: raspberries, blueberries, blackberries, strawberries, haskaps, black, pink and red
currants, gooseberries, jostaberries, lingonberries, elderberries, saskatoons and more!
In pots we have peaches, nectarines, figs and medlars, while our herb garden has
everything we might need to make our dishes more tasty: oregano, basil, tarragon, wild
fennel, mustards, savory, thyme, lovage, sorrel and on and on.
And, as we mentioned before, every year we sow all the annuals: from flowers to melons,
from tomatoes to sweet potatoes.
The main caretaker of the garden is Riccardo, who grew up in a country house in the north
of Italy, where he was surrounded by orchards, vegetable gardens, chickens, ducks, rabbits
and so on.
His family has always been involved in the restaurant business: restaurant owners, maitre
de salle, chefs and winemakers among them.
Our goal is to bring back a little of those old healthy traditions here in the Laurentians and
complete a marriage between the garden and the kitchen.
